Zucchini cake
Your eyes must have widened in surprise; cake and zucchini cannot go together, but this cake has won everyone's approval over the years. The secret is to keep them from telling them initially that it is zucchini cake. Let them enjoy the first piece without judgment or fear. While they are about to take the second piece, tell them the truth and enjoy the reaction 😊
Ingredients
- Two cups of zucchini pulp.
- 3 cups all-purpose flour.
- Two teaspoons baking powder.
- A tablespoon of ground cinnamon.
- Four large eggs.
- A teaspoon of vanilla.
- A cup of vegetable oil.
- Half a cup of liquid milk.
- For sweetness, you can add two cups of sugar or make the snack healthier by adding a cup of natural date molasses.
- Half a cup of walnuts.
- Half a cup of raisins.
Instructions
- Mix flour, cinnamon, and baking powder in a large bowl.
- Mix the sugar or molasses with the eggs, milk, and oil in an electric blender until the sugar dissolves completely, or for two minutes if you use molasses.
- Add the liquid ingredients to the flour mixture and mix them with a wooden spoon.
- Add the zucchini pulp, walnuts, and raisins, and mix all the ingredients well.
- Pour the mixture into a baking tray greased with oil and flour, and bake the cake in a preheated oven at 180 degrees for half an hour.
- Cut the cake after it has cooled, serve it with tea, and enjoy a surprise for everyone.
Protein energy balls
Protein energy balls are a snack that everyone loves. The cocoa and dates add enough sweetness that no one will ever know there is no added sugar!
Ingredients
- Three-quarters of a cup of nuts.
- Three-quarters of a cup of pitted dates.
- Two tablespoons of peanut butter, almond butter, or cashew butter.
- Three tablespoons of unsweetened cocoa powder.
Instructions
- Combine all ingredients in a food processor and blend.
- Form into balls and serve immediately, or store in the refrigerator.
Family smoothie
Smoothies are the best healthy snacks adults and children love, especially in the summer. These smoothies are a great addition to any breakfast or lunch.
Ingredients
- A cup and a half of yogurt.
- A cup of fresh or frozen berries.
- Two medium-sized bananas.
- Two tablespoons of milk
- Half a cup of spinach (a secret way to hide beneficial green leaves).
Instructions
Place all ingredients in an electric blender and run for a few minutes. Then, pour the mixture into cups and decorate them with fruits.
Cinnamon and Nuts Popcorn
This popcorn is one of the best snacks ever for children and adults. If you don't believe it, make it for your family. Let us know what they think.
Ingredients
- Four cups of popcorn kernels.
- Three-quarters of a cup of unroasted cashews.
- Three tablespoons butter.
- Two tablespoons of honey.
- Half a teaspoon of cinnamon powder.
- A quarter teaspoon of ground ginger.
- A quarter teaspoon of salt.
Instructions
- Preheat the oven to 185 degrees Celsius.
- Melt the butter and honey in a small pot over low heat. Add cinnamon, ginger, and salt.
- Place cashews in a considerable mixing bowl. Cover it with about a tablespoon of the butter and honey mixture.
- Spread the coated nuts on a baking tray covered with parchment paper and bake for 6 minutes.
- Meanwhile, in the same large bowl, cover plain popcorn evenly—with no kernels left unpopped—with the remaining butter-honey mixture.
- After the cashews have been in the oven for 6 minutes, remove the tray, add the popcorn, and mix them. Place the tray back in the oven and set the timer for 4 minutes.
- After 4 minutes, open the oven and move the mixture onto the baking tray. Set the timer for an additional two minutes.
- Open the oven again and stir the mixture so that there are no hot spots that can burn. Set the timer for another minute, and the mixture must be rechecked.
- Repeat checking the popcorn mixture every minute, then remove it from the oven when it turns dark brown.
- When you take the popcorn and nuts out of the oven, they will be a little moist but harden as they cool.
Granola bars
Granola bars are your best friend during a busy home, work, or school day.
Ingredients
- A cup and a half of oats.
- Half a cup of almond flour.
- Half a cup of chopped almonds.
- Half a cup of honey.
- Half a cup of raisins.
- A quarter cup of almond butter.
- Two tablespoons of chia seeds.
- A tablespoon of coconut oil.
- A teaspoon of pure vanilla extract.
- Half a teaspoon of ground cinnamon.
- A quarter teaspoon of salt.
Instructions
- Preheat the oven to 185 degrees Celsius. Place parchment paper on a baking tray.
- Combine oats, almond flour, honey, raisins, almond butter, chia seeds, oil, vanilla, cinnamon, salt, and nutmeg in a large bowl. Press the mixture well.
- Bake for 25 to 30 minutes until the edges are slightly golden. Let it cool completely in the baking tray.
- Cut it into eight rectangles. It will last about a week if wrapped well and stored in a cool place.
